DTI Vanilla Cake

Ingredients
  

  • 1/2 cup unsalted butter room temperature
  • 1/2 cup neutral oil
  • 1 1/4 cups granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract optional
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk room temperature

Method
 

  1. Preheat your oven to 350°F and grease two 8-inch round cake pans.
  2. Cream the butter, oil, and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing after each. Stir in the vanilla and almond extracts.
  4. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Add the dry mix in thirds, alternating with buttermilk. Start and end with the dry mix.
  6. Mix just until combined. Do not overmix.
  7. Divide batter evenly between the pans and smooth the tops.
  8. Bake for 30 to 35 minutes or until a toothpick comes out clean.
  9. Cool in pans for 10 minutes, then move to wire racks.
  10. Frost once completely cool or enjoy plain.

Notes

Use room-temperature ingredients for best results. If the batter is too thick, add a tablespoon of buttermilk. For extra depth, try browning the butter before mixing. Top with lemon glaze or berry sauce for a variation.
