Ingredients
  

  • 3 large eggs separated
  • 1/2 cup 100 g granulated sugar
  • 2 teaspoons vanilla extract or 1 teaspoon each vanilla and almond extract
  • 1 1/2 cups 140 g blanched almond flour
  • 2 tablespoons 17 g cornstarch or coconut flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 cups 390 g peeled and diced apples
  • 1/4 cup sliced almonds optional
  • 1 tablespoon turbinado sugar optional

Method
 

  1. Line the bottom of an 8-inch springform pan with parchment paper, grease the pan, and preheat the oven to 350°F (175°C).
  2. Whisk the egg yolks with the sugar until pale and thick, then add the extract.
  3. Mix in the almond flour, cornstarch, baking powder, and salt. The batter will be thick.
  4. In a clean bowl, whip the egg whites to stiff peaks.
  5. Fold the whites into the batter in three additions, then fold in the apples.
  6. Spread the batter in the pan and add the optional almonds and turbinado sugar.
  7. Bake for 35–40 minutes, until golden and a tester comes out clean.
  8. Cool in the pan for one hour before removing the ring.

Notes

Firm apples such as Honeycrisp, Jonagold, Pink Lady, or Granny Smith work well.
Fold gently so the whipped egg whites retain their volume.
